Once again, I invited “The Queen” to stop by for a visit. We found all kinds of good things in the fridge to work with too. Once again, from little bits of this and little bits of that, we created something really tasty. I made some Cajun dirty rice with black beans, in honor of Mardi Gras and Fat Tuesday. Usually dirty rice is made with red kidney beans. I didn’t have any kidney beans at the time, but I had plenty of black beans. I like them both and use them both for many different recipes, but then I like beans in general.
Cajun Dirty Rice with Black Beans
Seems appropriate as Mardi Gras is in full swing in New Orleans.

Seemed the right thing to do as Mardi Gras and the parades are going strong right now. Laissez le bontemps roulez back to you. I have never been to a New Orleans Mardi Gras parade, but been to a few in my home county. Nowhere near as big as New Orleans parades, but exciting enough.

Not sure I would go to one in New Orleans and wouldn’t go without taking precautions given how dangerous New Orleans can normally be.

During Mardi Gras, the day, most, possibly all, government offices are closed as you aren’t going anyway. downtown. Forgot about the crowding as I haven’t been to New Orleans since a training back in 1995 or 1996.

I have only been there once and I think it was about 1988 or 89. I love all the antebellum homes and all the rich history, and of course all the food.

Mom used to make gumbo. After her death, the recipe was lost.

Recipes are NEVER lost. They just need a little revival from time to time. Gumbo is a poor man’s food. there is no right way or wrong way to make it. 🙂

I thought my sister had a copy of the recipe, but her husband didn’t like gumbo. I am old enough that I don’t remember what went in Mom’s gumbo recipe. It depended a lot of how much she could spend. You could go to the docks and get shrimp from the boats cheaper than you could buy it in the stores. If she couldn’t afford shrimp, she would go with chicken as chicken was pretty cheap to buy, much cheaper than shrimp. I don’t remember it having tomatoes in it which is common om some households, depending on if it Creole or Cajun gumbo.

I do remember some things, but I would like to find her recipe. I doubt she wrote it down as that’s not something she would do. My father was a cook in the Air Force. End result he would fix enough for a small group and I hated leftovers as we would eat them for days when he cooked.

You can find Justin Wilson YouTube videos and he tends to go with a pinch of this or that. Pinch being whatever he thinks it should be as opposed to a specific amount.
