What’s your favorite ethnic food if any?

Gumbo, can’t remember if it’s Creole or Cajun. It’s the one without tomatoes since one of those groups uses tomatoes and the other doesn’t. Other than that, many Southern dishes although I am a picky eater. Gumbo is similar to Goulash as it’s whatever you want to put into it. Mom usually used shrimp, crab if they were in season. We would go crabbing during the summer and she would buy the shrimp off the shrimp boats as it was cheaper than buying them in the store.
Asked my sister a while back if she had our Mom’s gumbo recipe and she said no as her husband wasn’t a gumbo fan.

I remember the Louisiana guys I served with the Marines talk a lot about it, and had it when I visited New Orleans and Baton Rouge!
